Vitamin A:

  • Soluble in fat of food and not extracted in cooking.
  • Necessary for growth and development, also for health and resistance.
  • Lack of this vitamin results in general weakness, diseased condition of the eyes.
  • Contained in milk, butter, cream, cheese, egg yolk, fat of liver and kidneys (cod liver oil), germs of cereals, tomatoes, carrots, sweet potatoes, green pens, spinach (very rich).

Vitamin B:

  • Soluble in water of the food and extracted in cooking.
  • Reduced at ordinary cooking temperatures.
  • Necessary for growth and development, improves the appetite, and improves the functioning of the digestive tract and assimilation of food.
  • Lack of this vitamin results in under-development, low resistance and low functioning powers.
  • Contained in leaf and stalk vegetables (cabbage, lettuce, spinach) root vegetables, fruits, germ and bran of cereals, milk, fresh and dry, yeast.

Vitamin C:

  • Soluble in water of the food and extracted in cooking.
  • Greatly reduced by ordinary cooking methods.
  • Necessary to a healthy condition.
  • A continued lack of this vitamin results in scurvy.
  • Contained in fruits, especially oranges, pineapples, lemons and tomatoes; vegetables and especially green vegetables; raw milk and especially summer milk.

Vitamin D:

  • Soluble in fat of the food.
  • Necessary to assimilation of mineral matter (especially phosphorus and calcium)
  • A factor in the prevention and cure of rickets.
  • Necessary to a high resistance against disease.
  • Contained in cod liver oil, egg yolks, milk, cream, butter and green vegetables.
  • Direct exposure to sunlight is a strong factor in the functioning of Vitamin D in the body as well as in foods.
